Ricotta is white, soft and has a slightly sweet flavor that comes from the fresh milk. Ricotta is favorably used in Italian desserts.
For the cookies:
500g all-purpose flour
420g of ricotta
1 tsp baking powder
3/4 tsp salt, 350g granulated sugar
30g unsalted butter, softened
1 tsp lemon zest, 1 tbsp vanilla extract
2 large eggs
For the glaze:
1 Tbsp butter (salted or unsalted), melted 460g powdered sugar
2 Tbsp fresh lemon juice
1 tsp vanilla extract - 6 Tbsp milk
Step 1 | For the cookies: 1. Mix together flour, baking powder, and salt for 20 seconds, set aside. 2. Mix together the butter, granulated sugar, and lemon zest until a light foam is obtained. 3. Mix the ricotta and vanilla extract, then add the eggs one at a time. Set the mixer on low speed and slowly add the flour mixture. Mix well. Cover the bowl with cling film and cool for at least 2 hours. Preheat the oven to 180 Celsius degrees during the last 20 minutes of cooling the dough. 4. Collect the cold dough 1 tablespoon at a time and form it into balls to drop on a baking sheet lined with parchment paper. 5. Bake 12 - 14 minutes until the bottom of the biscuits is golden. Allow cooling completely. 6. Once cooled, dip the cookies into the icing and immediately add the colored sugar sprinkles if using. Allow the glaze to solidify at room temperature. Store in an airtight container in a single layer. |
Step 2 | For the glaze: In a bowl, whisk together the icing sugar, melted butter, lemon juice or almond extract, vanilla, and 4 tablespoons of milk until the mixture is homogeneous, adding more milk 1 teaspoon at a time to dilute as needed. Credits:cookingclassy |
